Leftover Veggies

Leftovers can really hit the spot sometimes!
I’m sitting at my desk right now enjoying some amazing leftovers from the Viking Cooking School “Vegetarian Dinner Party” cooking class I attended Tuesday night with some friends.
The class was great and the location couldn’t have been better as it was held at our local gourmet market Hubble and Hudson.

The menu we were creating was delicious!

Vegetarian Dinner Party
Eggplant Roulades with Oven-Dried Tomatoes and Chèvre Cream Sauce
Bonus Recipe: Basil Pesto
Smoked Wild Mushroom “Baklava”
Baby Greens with Truffle Vinaigrette
Roasted Cauliflower with Lemon, Capers, and Olives
Individual Baked Alaska
Sample Recipe: Individual Angel Food Cakes
Bonus Recipe: Key Lime Cocktails

While we cooked we sipped on Cycles Gladiator Pinot Grigio and tasted many of the ingredients before actually adding them to their dish.

All of the food was amazing and when it was time for desert I enjoyed “baking” my Baked Alaska with a torch. The Sous Chef said I was a pro at that, haha.

There was of course tons of food left over since we were cooking for just the four of us, so we came home with lots of tasty leftovers (minus the cauliflower… that disappeared really fast!).

What a fun and tasty night out with friends!
